Making Herbal Vinegar & Rosewater: This is very easy, --- but, you must use fresh herbs, and fresh rose petals. I've made basil vinegar, oregano vinegar, thyme vinegar and garlic chive vinegar. Just heat red wine or apple cider vinegar to warm, bruise the fresh herbs slightly, put them in a pretty bottle and pour the vinegar down over them to cover them completely. Your vinegar will take at least a few weeks to "make up," for the essence of the herb to go into the vinegar. ...I made rosewater... You must use fresh rose petals, hopefully from home-grown fragrant roses, such as Chrysler Imperial, Peace, Madame Hardy, Tuscany, --- or other fragrant damask or Old World roses. Drop the fresh, crushed petals into warmed spring water, add a little vodka to preserve and a pinch of sea salt. It will probably take a few months for your rose water to "make up".
